Ingredients
  1. • 1/4 cup ketchup
  2. • 1/4 cup light mayonnaise
  3. • 1 tablespoon yellow mustard
  4. • 1 1/4 pound lean ground beef
  5. • 1/2 teaspoon salt
  6. • 1/4 teaspoon pepper
  7. • 8 slices bacon
  8. • 4 sesame hamburgers buns, split
  9. • Lettuce and tomato for garnish
Instructions
  1. 1. Preheat grill to medium-high.
  2. 2. Stir ketchup, mayonnaise and mustard in a bowl until blended; set aside.
  3. 3. Shape beef into 4 patties, each 3⁄4-inch thick. Sprinkle with salt and pepper.
  4. 4. Wrap each burger with 2 strips of bacon, crossing each other at right angles.
  5. 5. Place patties on the hot grill rack and cook about 10 to 12 minutes, or until they reach your desired doneness, turning once.
  6. 6. Place the buns on the grill to toast during last 2 minutes of cooking.
  7. 7. Serve burgers on buns with lettuce, tomato and ketchup sauce.

Ingredients
  1. • 3 tablespoons chile powder, preferably New Mexico chile or Hungarian paprika
  2. • 2 tablespoons extra-virgin olive oil
  3. • 2 teaspoons freshly grated lime zest
  4. • 3 tablespoons lime juice
  5. • 1 tablespoon minced garlic
  6. • 1 teaspoon ground coriander
  7. • 1 teaspoon ground cumin
  8. • 1 teaspoon dried oregano, preferably Mexican
  9. • 1 ½ teaspoons kosher salt
  10. • 1 teaspoon freshly ground pepper
  11. • 1 pinch ground cinnamon
  12. • 1 whole 3 ½ to 4 pound chicken
Instructions
  1. 1. Combine chile powder (or paprika) and oil in a small bowl with lime zest and juice, garlic, coriander, cumin, oregano, salt, pepper, and cinnamon to form a wet paste.
  2. 2. Using kitchen shears, cut the chicken down one side of the backbone, through the ribs. Make an identical cut on the opposite side to remove the backbone completely; discard (or reserve it for stock).
  3. 3. Place the chicken cut-side down and flatten with the heel of your hand.
  4. 4. Generously smear the spice rub under and over the skin and on the interior of the bird. Place in a nonreactive baking dish).
  5. 5. Cover with plastic wrap and refrigerate overnight or up to 24 hours.
  6. 6. Preheat half the grill to medium-high (or build a medium-high heat fire on one side of a charcoal grill); leave the other half unheated.
  7. 7. Have a squirt bottle of water ready by the grill.
  8. 8. Leave all the spice rub on the chicken.
  9. 9. Place the chicken skin-side down over the heat and grill until the skin begins to color and char marks form, about 5 minutes. (Extinguish any flare-ups with the squirt bottle.)
  10. 10. Flip over and grill 5 minutes more.
  11. 11. Move the chicken to the unheated side.
  12. 12. Close the lid and cook, making sure the chicken is flat against the grate, until an instant-read thermometer inserted into the thickest part of a thigh without touching bone registers 165 degrees F, 30 to 40 minutes.
  13. 13. Transfer to a platter and let rest for 5 to 10 minutes before carving.
Notes
  1. Serve with lime wedges and fresh salsa.
