Treat your Mom this Mother’s Day! Don’t force her to go to a crowded restaurant where you have to wait an hour for a seat (even though you had reservations) just to get rushed through your meal so they can seat someone else. Make your Mom a lovely brunch at home, where you can all relax and spend some real quality time together!

Ingredients
  1. • 8 egg whites, at room temperature
  2. • 1/2 cup whipping cream
  3. • 6oz lox, chopped into 1/2-inch pieces
  4. • 1 lemon, zested
  5. • 1/2 teaspoon kosher salt
  6. • 1/2 teaspoon freshly ground black pepper
  7. • 2 tablespoons olive oil
  8. • 2 packed cups (2 ounces) arugula
  9. • 1 clove garlic, minced
Instructions
  1. 1. Put an oven rack in the center of the oven. Preheat the oven to 350 degrees F.
  2. 2. In a medium bowl, whisk the egg whites until fluffy, about 30 seconds.
  3. 3. Add cream, lox, lemon zest, salt, and pepper.
  4. 4. In a 10-inch, ovenproof, nonstick skillet, heat oil over medium heat.
  5. 5. Add arugula and garlic.
  6. 6. Cook, stirring frequently, until the arugula has wilted, about 1 minute.
  7. 7. Pour egg mixture into the pan and stir to combine the ingredients.
  8. 8. Cook, without stirring for 4 minutes.
  9. 9. Transfer the skillet to the oven and bake until set, about 10 to 12 minutes.
Notes
  1. Using a serrated knife, cut the frittata into wedges and serve warm or at room temperature.

Ingredients for Crepes
  1. • 1 cup all-purpose flour
  2. • Pinch salt
  3. • 1 egg
  4. • 1 egg yolk
  5. • 1 1/2 to 2 cups milk
  6. • 1 tablespoon melted butter
  7. • 1/2 teaspoon vanilla extract
Ingredients for Filling
  1. • 1 jar Nutella
  2. • 5 bananas, sliced
  3. • 1 can whipping cream
Instructions
  1. 1. Sift the flour with the salt into a bowl.
  2. 2. Make a well in the center and add the egg and egg yolk.
  3. 3. Pour in the milk, slowly, stirring constantly. When half is added, stir in the melted butter and vanilla.
  4. 4. Beat well until smooth.
  5. 5. Add the remaining milk, cover and let stand at room temperature for at least 20 minutes before using. The batter should be the consistency of light cream.
  6. 6. Heat a well greased 6-inch skillet.
  7. 7. Add 1/4 cup batter.
  8. 8. Tip skillet from side to side until batter covers bottom.
  9. 9. Cook until the bottom is golden brown, turn and remove to a plate.
  10. 10. Repeat with remaining batter.
  11. 11. Spread a thin layer of Nutella onto crepe and place banana slices down the center.
  12. 12. Roll or fold crepe.
Notes
  1. Just before serving top with whipped cream.

I haven’t tried the Hershey’s chocolate, Kev, I am a big fan of crepes so I’m sure I’d like either one. I’ll try both and let you know 🙂

I am going to have to try and make those crepes. I think I would replace the Nutella with those new jars of hershey chocolate though.
